Bacon, Thyme and Mozzarella Savoury Bread Pudding

Today I will tell you the most beautiful thing I saw in a long time. It’s about children, care and love. That kind of love, pure and simple, that we adults find very hard to express or to maintain.

I’ve been working with children for 5 years and during this period I laughed many times at the amazingly funny things they said or did. I’m sure you know what the mind of a child can come up with. Working with children involves a beautiful mutual learning process. Many times I feel that I learned so much more from them than they learned from me. As a phychotherapist, I help children to develop properly and this involves a cognitive approach of the things around us. Instead, they remind me every day that life is emotion, that we are waiting for tomorrow hoping that we will have as many moments of joy as we can. The most important part of the lesson received from children was that of searching happiness in simple things, in simple and clean actions or gestures. This is exactly what L. and K. are showing me for quite some time. L. is a 6 years old boy and K. is a 6 years old girl. They are best friends and classmates. They spend every break time together, playing, drawing or sharing the snack. What is truly beautiful and  impressive in their friendship is that they smile to each other a lot and  without the need of a reason. For me this is the perfect expression of enjoying the time spent with someone dear to you. The way they care about each other, the way they hold hands when they go together somewhere, the way he asked her, when they were playing outside, if she is cold, offering her his scarf, makes me think that this must be the most beautiful thing I saw in a long time. Pure and clean love and friendship, that kind of simple love that only a child is capable of, that kind of emotion so strong and true that spreads to everything that is around. I hope very much that their beautiful emotions last as long as it’s possible and even if those emotions turn off some day, I hope they stay alive in their memories.

And because what inspired me today was about simplicity and true emotions, I prepared a Savoury Bread Pudding, a simple and quick recipe, perfect for an evening that follows a full day of beautiful emotions.

Bacon, Thyme and Mozzarella Savoury Bread Pudding

10 stale bread slices

2 eggs

1 cup milk

½ cup mozzarella

2-3 tablespoons grated Parmesan

2-3 tablespoons room temperature butter

10 slices bacon

thyme

salt, pepper

Preheat the oven to 375°F. Butter the bread slices. Arrange the slices in the pan. Add between bread slices some slices of mozzarella and fried bacon. Mix the milk and eggs, add some salt and pepper and whisk. Pour over the bread and leave to absorb for 10 minutes. Sprinkle some Parmesan and some thyme, or other herbs that you prefer, on top. Bake in the oven for 20 minutes or until the pudding is nicely browned. Serve warm and enjoy this simple but delicious comfort food!
